Service is good. Owner was nice. BBQ pork, slaw, and beans are mediocre at best. Why is the sauce so watery?

I love everything about this place from the rolls of paper towels on the tables to the soda glasses as big as your head. We shared three dinners: pork barbecue, two-piece catfish and 4 pork ribs. The pork BBQ is delicious loose meat. The catfish was wonderfully cooked in a light cornmeal breading. The huge ribs were perfectly done and tasted best with the rib sauce on the table. Other sauces on the table include tartar, mild and hot sauce, which was the best. The restaurant and restrooms were cleanand the owners/staff were very friendly and attentive. Unfortunately did not have room for one of the six homemade pies offered for dessert.
